Drying is the oldest method of conserving mushrooms, giving these sliced porcini mushrooms an intense flavour and creamy deep hazelnut colour. Porcini mushrooms (boletus edulis and related species) are a prized harvest from the woods and can be distinguished when dried for their intense aroma, sweet fragrance and softness. Depending on the age of the fresh mushroom, they are categorised into three different quality classes. These are commercial class, being more mature mushrooms with intense taste, smaller and with a darker colour, intended mainly for sauces and pasta or rice dishes.
