In the heart of the lower Modena area, Le Aperte farm lies in soil rich in clay, encouraging the synthesis of sugars in its grapevines, creating particularly sweet musts suitable for the production of an excellent balsamic vinegar of Modena. The Mantovani family have acquired the secrets of generational farmers to establish the Acetaia project over the past 20 years.
